Living in Arizona, summer lasts just a little longer and since it's still over 100 everyday, why not embrace it?!? I found a gorgeous box of peaches at Trader Joe's and figured why not have a peach extravaganza. I love the flavor of fresh peaches, but I've always been intimidated to cook with them. Since I've been home more I've built a little momentum and confidence back in the kitchen, so I figured it was a good time to experiment with them. Let me tell you, I was not disappointed!
Adding fresh fruit to pancakes is always a win, but fresh peaches just takes it up another notch.
Oddly, both my kids avoid fruit like nothing I've ever seen, so I tried to entice them with a cute face, but sadly, no luck. I thought it was cute at least.
Now that breakfast is done, let's talk lunch and dinner. When I think of peaches, I think sweet, decadent desserts, but I had so many peaches, I wanted to do something a little more savory to enjoy during the day as well. I decided a peach salsa was the perfect compliment to the fish tacos I was making for dinner, and it did not disappoint.
Now, it's time for dessert. Seriously, peach pie is my favorite, but I wanted to try something different. I've seen pictures of baked peaches with cinnamon and brown sugar, so decided to try that one night.
And I needed one just over the top, decadent dessert to finish off my peach extravaganza. I scoured Pinterest and found a Peaches and Cream Bars recipe from Taste & Tell Blog that turned out amazing! I will tell you, my pictures do NOT do it justice.
